Tasty Tacos

INGREDIENTS:

- 1 cup uncooked quinoa

- 1 diced onion

- 2 cups black beans, drained

- 1 cup vegetable stock

- 1 can enchilada sauce

- 2 tbs. taco seasoning

Optional:

- 1 cup cooked corn

- 2 tbsp. Chile peppers/jalapenos








INSTRUCTIONS:

Place all ingredients in slow cooker on low for 4 - 6 hours, stirring occasionally. Serve and Enjoy ☼
